HPP stands for high pressure processing. Already-packaged product is held at 1,000 to 6,000 atmospheres (roughly 100 to 600 MPa) at ambient temperature, inactivating microorganisms without heat. Because no heat is applied, heat-sensitive vitamins and the original flavour profile survive the process.

What decides whether a product enters a market is usually the certificate, not the formula. You do not need to sit for one: what counts is that your product is made on a line that holds it, and where none does, we take the closest line there.
